not yo momma's salad. (healthy you, happy you link up)

oh, so you saw the word salad and turned up your nose?

don't. buhlieve you mean when i tell you i am in love, obsessed, fascinated with this salad. 

one of the reasons why i was never really a salad girl, was because i didn't really care much to be eating what some dub as rabbit food. but seriously, when you have no other option than to eat healthy due to a crazy yet fabulous idea, you knock that noggin for imagination. that and you google salad recipes. 

hence the never would've thought it myself above salad. 

i know i'm about to sound like a commercial, but it  made my taste buds so happy. could be i was starving, but it was really good!

okay, i'll get off my soap box and let you give it a whirl. 

SPINACH AND WATERMELON SALAD WITH FETA AND MINT

2-3 handfuls of baby spinach

watermelon wedges (however many you fancy)

1/3 cup of feta

a few chopped mint leaves

balsamic vinagrette

place baby spinach on plate nice and pretty. top with watermelon wedges and feta crumbles. drizzle vinagrette and sprinkle mint leaves all over.

start eating!
